I figure I've got a few paragraphs, before you reach the title of this post, to convince you that your eyes have not deceived you. When I talk about "clean eating" I usually mean that my kitchen table is tidy, but I accidentally stumbled across a delectable, healthy snack bar while I was in Sydney but at $6 a pop the inner Wog in me awoke and I was immediately convinced that I could make it cheaper myself.
Most of these ingredients I already had at home - we throw a tablespoon of coconut oil into our morning smoothies and there was a lonely bag of raw, organic cacao hiding in the back of our pantry behind it's more popular cousin, Milo.
If, like me, you find yourself scavenging for a sugar-fuelled pick-me-up at around 3.30 every afternoon, give this recipe a go. I would go so far as to say they are as good, if not better, than the original Coconut Rough and the guilt-free factor will have you adding this recipe to your clean-eating repertoire - just don't eat the whole batch in one go (they are yummy, don't say I didn't warn you).
clean coconut rough balls
Makes about 20 balls
500g Merjool dates, seeds removed
4 tbsp raw, organic cacao powder
2 tbsp lucuma powder (I used Loving Earth)
1/4 cup desiccated coconut
3 heaped tbsp coconut oil (I measured it when hard)
Seeds from 1 vanilla bean
Pinch of sea salt flakes
Combine all ingredients in a food processor and blitz until all ingredients are smooth and paste-like and form a large ball in your food processor.
Roll a tablespoon-sized amount of the mixture into a ball. Repeat with remaining mixture. Devour!
